Mother’s Day brunch is a tradition for us and this year I’m making my mom’s favorite… banana pecan waffles and mimosas! And I’m dressing the whole day up in pinks and black, a bit girly and a bit sophisticated. Just her style!
Personally, I’m seriously blessed. I’ve had some amazing women in my life. Between my mom and my grandmothers, I’ve always had somewhere to turn to for advice and guidance. So when it comes to celebrating them, I’m all in. This brunch is actually very simple, because let’s face it… I’m a mom too and I want to have a relaxing day. {wink}
That said, just because it’s simple, doesn’t mean it can’t be lovely and thoughtful. My mom’s favorite flavor combo is pecan (she’s southern remember!) and banana. My kiddos prefer blueberry and chocolate chip, so of course we’ll be serving those too.
I make whipping up multiple flavors a snap with my Vitamix. Just prep your basic waffle batter and set it aside. In your Vitamix, throw in your ingredients, pulse them, add batter and blend on setting 5 or medium (depending on your Vitamix). Pour your batter into a bowl and set aside. Add water and soap to the Vitamix, blend on high for a minute and wahlah… it’s clean! Prep the next flavor!
For the pecan and banana recipe, I put in 1/2 cup pecans and two medium ripe bananas. Pulse them a few times to chop it all up really well. Then, add 2 cups of batter (more or less depending how flavorful you want your waffles). Blend for 45 seconds on 5 or medium. Cook. It’s that easy!!
Now, for setting the table. I suggest going with her favorite colors. I chose black and pink for my mom. For yours, you can either shop your house for keepsakes to make her smile, or head to the store for a few accessories. Maybe things that double as lovely gifts, like the domed cake plate. It’s my new favorite and it keeps my waffles warm!
The table should be filled with toppings, like pecans, banana, syrup, etc.
I chose to make her favorite brunch drink too. Banana, pineapple, orange juice mimosas are the absolute best! I found these darling little clear spoons and used them as stir sticks as well as a way to add some fresh banana to the blend. A little champagne bubbly and they’re perfect. I post more about these in a couple of days. Promise! {wink}
And because I love a statement piece, especially when it makes my mom feel special, I also whipped up some black and white paper flowers. I’ll share more about these in a couple of days too. They’re perfect on the wall, as a bouquet and even as Mother’s Day gift wrap toppers! {hint!}
Make sure you don’t forget the powdered sugar… it makes every waffle plate beautiful and ever bite perfection!
Whatever you do for Mother’s Day, make it personal. She will appreciate the thought and love you put into making her feel special that day. And make sure you consider adding Vitamix to your kitchen and hers! It’s the perfect Mother’s Day gift!
