Peanut butter banana pancakes. Yum! Birthday breakfasts are fun. I almost never let my boys have sweets before noon… I know… the occasional doughnut never hurt anyone. It’s more of… if they start the day with sugar it seems to just keep going. {wink}
In any case, birthdays are different and my family has so many birthdays this month. My hubby turns… well… just turns… tomorrow. And my youngest turns 8 next week. I can’t believe my little boy is going to be 8 years old!
And we’ll be having birthday breakfasts. Something fun and yummy to kick off the day of sugar.
These peanut butter banana pancakes are so very simple… because… well, I used a shortcut.
- 2 eggs
- 1 1/4 cup soy milk
- 2 cups Bisquick
- 1 tsp vanilla
- 1 large ripe banana
Blend all ingredients in a mixer, spoon onto a flat griddle and cook… with butter. Yep. Butter.
For the topping, it doesn’t get any easier. Just microwave (in a microwave safe bowl) 1 tbsp of smooth peanut butter per pancake stack and drizzle.
For decorations, I used paper straws, stripe napkins, and mini forks from Target. And those darling little sparkle poms are Darice brand from JoAnn Fabric and Craft Stores.
