Hi Everyone, it’s Bridget again! Today I’m sharing a few of my favorite ways to celebrate Cinco de Mayo. Since my hubby’s birthday is the same day, it’s a fun annual fiesta filled with lots of great food, fun beverages and plenty of cheerful decor; not to mention that it’s a time-honored way to celebrate Mexican heritage.
It all starts with the perfect margarita! What better way to celebrate than with a toast-worthy beverage?! This year’s menu kicks off with some calorie-light watermelon margaritas from Cooking Light. The watermelon sounds refreshing!
Of course, we must have scrumptious snacks to nosh on while dinner is cooking, so I’ll be pulling out some munchies. Pork and pinto bean nachos from My Recipes are a colorful and delicious start to any fiesta, and hearty enough to keep hungry mouths satisfied.
All of my kiddos LOVE guacamole, so we’re sure to have kid-friendly guacamole (from Kiboomu) too, care of little hands that delightedly mash any avocado in sight. My littlest is super sneaky as a helper; she’s been known to steal the bowl and lick it clean! {smirk}
No matter what you choose for your meal, you can’t forget the fabulous Cinco de Mayo desserts. Call me crazy, but I often make a dessert for the kids and one for the adults. {grin} After our spicy meal, I prefer to round things out with something light. A huge hit in our house is homemade popsicles, and I discovered this fabulous recipe for Cucumber Honeydew Margarita Popsicles from bakersroyale on Endless Simmer (without the tequila and triple sec for the kids, of course!)
I still want to have something fabulous for the adults to celebrate, so I’ll serve something like these margarita lime cubes from Liv Life Too. They are quick and easy to make and the perfect way to cleanse our palette.
