One of my mom’s most loved recipes is her southern style potato salad. I have to admit, it is amazing. She makes it for all of our summer family gatherings and my hubby eats the most. {grin}
It’s super simple to make Southern Potato Salad! You’ll need:
- 1 medium onion, finely chopped
- 7 large potatoes, peeled, cubed
- 1 tsp. salt
- 10-12 hard-boiled eggs, chopped
- ½ cup sweet pickle relish
- Paprika, salt, and black pepper to taste
- 2/3 cup mayo
- 4 tbsp. Gulden’s Mustard
Easy steps:
- Boil chopped and salted potatoes in a covered dish for 14 minutes or until until tender. Drain.
- Add onions to bowl, pour hot potatoes over top and allow to set for five minutes. Hot potatoes will cook the onions a little and soften them up.
- Peel and chop eggs. Add to bowl.
- Add pickle relish.
- Add mayonnaise.
- Add paprika, salt and pepper to taste.
- Add mustard.
- Gently fold and refrigerate.
