This Easter I’ll be celebrating with some of my extended family that I don’t get to see often enough. Well, they love me, and I know they do… but I plan to arrive with an Easter dessert just to seal the deal! {wink} I was raised in the South by a momma that felt you were not to arrive at a person’s home for dinner without a hostess gift (usually some sort of food item). And because I’ll be traveling, and unable to bake myself, I’ll be relying on the magic that is Edwards Pies.
I hopped {shameless Easter pun} over to Wal-Mart and chose the Edwards Triple Coconut Creme Pie (such an amazing recipe people!) because it has luscious layers on a baked cookie crust and topped with toasted coconut. That said there are over a dozen recipes to choose from. Plus, Mrs. Smith’s pies are amazing too, especially the Dutch Apple Crumb Pie. We serve it a la mode and it’s enough to make your knees buckle. True story!
For Easter dessert, I’m not only topping the box with a Easter note from my little family, I’m bringing pretty little plates and utensils. There will likely be lots of wandering around the yard while kids run crazy hunting for Easter eggs. Plus, it will be easy clean-up!
This cookie pie crust is perfection. It’s just the right mix of moist yet crunchy… trust me… I ate two slices! {sheepish grin}

Serving the pie at your Easter brunch? I personally love “tasting” servings at family parties. Inevitably there will be tons of food, because we all bring something {grin}. Dessert shooters allow everyone to have a “taste” without overdoing it.
These Triple Coconut Creme Pie dessert shooters are super easy to make. On a cold cutting board, deconstruct the pie while frozen: divide the three sections and layer starting with the cookie crust. Not only are these darling and easy, but one pie will now serve double the amount of guests. Clever and yummy!
